The course will cover a wide range of BBQ skills, some of which you will have already been using and will introduce you to techniques that you may not have tried before. By the end of the course you will return home with a much better understanding of the versatility of the BBQ. New for 2018 – the course will also include an introduction to cold smoking techniques.

 

The course will cover:

  • Choice of BBQ/Smoker – You will get a chance to try cooking on a variety of BBQ/Smoker including charcoal, gas and pellet. You will learn the pros and cons of each and the different ways in which they can be used.

  • Types of fuel – You will understand what to buy and, more importantly, what to avoid.

  • Cooking by temperature -  You will learn to cook on the BBQ with confidence, knowing that what you serve is safe to eat whilst remaining juicy and tender.

  • Grilling – This will include the preparation of spicy chicken wings or gourmet burgers.

  • Roasting – Beer can chicken and bacon wrapped meat loaf (“Sausage Bomb”).

  • Hot Smoking – Pork ribs. What to buy, how to prepare and how to smoke.

  • Baking – Focaccia Bread or Texas Biscuits.

  • Desserts – Caramelised pineapple and pear or banana tarte tatin.

  • Cold Smoking – Smoked salmon steaks and smoked cheese.

 

Please note that the meats cooked may vary on each course as they are freshly sourced and are subject to availability. If a meat is unavailable it will be substituted with an equivalent.
